Instructions

  1. Prepare the Feta: Break the block of feta into about 8 pieces and place it in a fine mesh strainer. Rinse briefly under cold water, then drain well. This step helps reduce some of the saltiness but is optional.
  2. Make the Hot Honey: Combine the honey and red pepper flakes in a small saucepan. Warm over medium heat until the honey starts to simmer. Remove from heat and allow it to cool while you prepare the dip.
  3. Whip the Feta: Transfer the drained feta pieces to the bowl of a food processor. Add the lemon juice and whole milk (or Greek yogurt). Process until the mixture resembles ricotta or cottage cheese. With the processor running, slowly drizzle in the olive oil. Scrape down the bowl and continue processing until the dip is smooth and creamy with a consistency similar to Greek yogurt.
  4. Assemble and Serve: Transfer the whipped feta to a serving bowl. Using a spoon, create a swirl on top of the dip. Drizzle the cooled hot honey over the feta and garnish with finely chopped pistachios. Serve immediately with toasted baguette slices.
